Master in Nutrition and Culinary Art

This Master study program is a 100% research-based academic pathway designed for professionals and graduates who seek to integrate scientific nutrition principles with advanced culinary creativity. Positioned at a level equal to EQF Level 7 and aligned with the second European cycle, the program carries an academic workload equivalent to 60 ECTS.

The Master in Nutrition and Culinary Art bridges the science of human nutrition with the artistry of gastronomy. It equips participants with the analytical and research competencies required to design nutritionally balanced menus, evaluate dietary trends, develop functional and therapeutic food concepts, and apply evidence-based approaches to culinary innovation. The program emphasizes health-conscious gastronomy, sustainable food systems, and the growing global demand for nutrition-focused culinary leadership.

The academic structure consists of five modules, including:

  • Two research-focused modules dedicated to advanced research methodology, data analysis, academic writing, and critical evaluation in the fields of nutrition and culinary science.

  • Two general academic modules covering strategic management, leadership, innovation, and organizational development within food, hospitality, and wellness environments.

  • One specialized module in Nutrition and Culinary Art, concentrating on nutritional biochemistry fundamentals, menu engineering for health optimization, functional foods, dietary planning, sustainable ingredient sourcing, culinary techniques aligned with nutritional standards, and global food trends.

The program culminates in a thesis and structured research activities, enabling participants to produce original academic work that contributes to the evolving intersection of nutrition science and culinary arts.

With a minimum duration of 12 months, the program provides structured academic progression combined with flexibility, allowing students to extend their study period according to research development and professional commitments.
