This Master study program is a 100% research-based academic pathway designed for professionals and graduates who aim to advance their expertise in culinary leadership, gastronomy innovation, and strategic food operations management. Positioned at a level equal to EQF Level 7 and aligned with the second European cycle, the program provides an advanced academic framework equivalent to 60 ECTS credits.
The Master in Culinary Management integrates culinary excellence with managerial, economic, and strategic perspectives. It focuses on transforming culinary practice into evidence-based management, equipping participants with the ability to analyze food industry trends, optimize kitchen and hospitality operations, and develop sustainable and innovative culinary concepts.
The academic structure consists of five modules:
Two research-oriented modules focusing on advanced research methodologies, academic writing, and analytical frameworks applicable to the food and hospitality sector.
Two general management modules covering leadership, strategic management, and organizational development within culinary and hospitality environments.
One specialized module in Culinary Management, addressing gastronomy innovation, menu engineering, food cost control, sustainability in food production, supply chain strategies, and global culinary trends.
The program concludes with a comprehensive thesis and research activities, enabling participants to produce an original research contribution within the field of culinary management.
