This Master study program is a 100% research-based academic pathway designed for professionals and aspiring leaders in the fields of culinary innovation, gastronomy, and food service management. Positioned at a level equal to EQF Level 7 and aligned with the 2nd European cycle, the program emphasizes analytical thinking, research excellence, and strategic development within modern culinary and food service environments.

The Master in Culinary Arts and Food Services integrates academic research with the evolving realities of global gastronomy, sustainable food systems, hospitality operations, and food service innovation. It is structured to develop advanced competencies in culinary research, food culture analysis, service design, operational strategy, and evidence-based decision-making in professional kitchen and food service settings.

The program consists of five modules:

  • Two research-focused modules that build advanced skills in research methodology, academic writing, data analysis, and applied culinary research.

  • Two general modules that strengthen leadership, strategic management, and critical thinking within hospitality and service environments.

  • One specialized module dedicated to Culinary Arts and Food Services, addressing contemporary trends such as food sustainability, gastronomy innovation, menu engineering, nutrition-conscious design, food safety systems, and service optimization.

The program culminates in a thesis and structured research activities that allow participants to contribute original insights to the field of culinary arts and food services.

With a duration of +12 months (minimum duration applies, with flexibility for extension), the program is equivalent to 60 ECTS credits. It is tailored for professionals seeking to enhance their academic profile, advance into leadership roles, or engage in research and consultancy within restaurants, hotels, catering enterprises, food production companies, and culinary education institutions.
